The Aviation cocktail we know and love today is sky blue with floral notes, thanks to the inclusion of crème de violette. But it wasn’t always such a fitting hue. The oft-used recipe, which appeared in Harry Craddock’s The Savoy Cocktail Book (originally published in 1930), called for just three ingredients: dry gin, lemon juice and maraschino liqueur.
